I am one of those annoying persons who likes talking (a lot) about any new and positive thing I introduce in my life. Some of the victims of my relentless preaching are my sister, my mum and of course my friends (they know if they are reading this).
So the latest story of life is ‘develop a hobby‘ and nurture it. I am surprised how much my love for baking (my recent hobby) has grown over the last couple of years and surprised because I am the sort of person who gets bored very quickly. And while I have had several blunders which I’d rather not talk about, I have finally been able to do some things right.
Today I did some baking for a family birthday which was a lot of fun because like they say sometimes the journey is more exciting than the destination and that is so true. I decided to bake Cupcakes today instead of a traditional birthday cake. Cupcakes are interesting little creatures, trace back to 1796 when they first came into being and though that fact has absolutely no significance whatsoever in our lives we know that they are definitely special to have lasted these centuries . 🙂
I made some vanilla and cinnamon cupcakes the recipe for which you can find below and I am not an expert but the feedback was great so I’d say give it a go… 🙂
-You will need-
For Vanilla Cupcakes
175 grams self raising flour
175 grams unsalted butter
175 grams caster sugar
1/4 tsp concentrated clear vanilla extract
1 tsp baking powder
3 medium size eggs
For Cinnamon cupcakes replace vanilla extract by 1 tsp of ground cinnamon
-Let’s bake –
1.Set the oven to preheat at 180 degree Celsius.
2. Add all the ingredients listed above into a mixing bowl and whisk till creamy.
3. Pour in the baking tray that has cup cake cases lined in them.
4. Bake for 30 minutes and place them on wire racks to avoid the ‘soggy bottom’ story.
5. Decorate as you like, I usually go for a butter cream icing with sparkles (I love a bit of bling).
